A delicious homemade dinner doesn't have to involve complicated techniques or a long list of ingredients. These Thai-inspired pumpkin noodles combine tender roasted vegetables, a fragrant coconut curry sauce and soft noodles in one colourful, satisfying bowl.
The pumpkin develops a delicate sweetness in the oven, while red curry paste adds warmth and aromatic depth. Coconut milk creates a creamy sauce, balanced by fresh lime juice and crisp green vegetables.
Perfect for a quick evening meal, this recipe serves two and can easily be adapted to suit different tastes.

Why These Noodles Taste So Good

The secret to this dish lies in combining contrasting flavours and textures.
Roasting the pumpkin concentrates its natural sweetness and gives the edges a lightly caramelised finish.
Thai red curry paste introduces fragrant spices, while coconut milk softens the heat and creates a velvety broth.
Fresh lime juice provides acidity, preventing the sauce from tasting too rich.
Sugar snap peas add crunch, and coriander brings a fresh finishing touch.
Unlike traditional noodle soups, this version uses relatively little liquid, allowing the sauce to coat the noodles without overwhelming them.

Ingredients For Pumpkin Noodles

Servings: 2
Preparation time: 15 minutes
Cooking time: 25 minutes
Total time: 40 minutes
Difficulty: Easy
400g butternut pumpkin, peeled and cubed
2 teaspoons olive oil
2 tablespoons Thai red curry paste, plus 2 teaspoons
1 shallot or small red onion, finely sliced
400ml coconut milk
1 lime
A few drops of fish sauce (optional)
100g sugar snap peas
1 red chilli, thinly sliced (optional)
2 portions of precooked noodles, such as rice, egg or udon
A small handful of fresh coriander
Salt, to taste
For a vegetarian version, omit the fish sauce and use a vegetarian curry paste. Choose rice noodles labelled gluten-free if avoiding gluten.

How To Make Thai Pumpkin Noodles

Step 1: Roast the pumpkin.
Preheat the oven to 200°C, or 180°C fan.
Combine the olive oil with two teaspoons of red curry paste.
Toss the pumpkin pieces in the mixture, season lightly and spread across a baking tray.
Roast for 20–25 minutes, turning halfway through, until tender and golden around the edges.
Step 2: Prepare the aromatic base.
Meanwhile, heat a spoonful of the thick coconut cream from the tin in a saucepan over a medium heat.
Add the sliced shallot and remaining two tablespoons of curry paste.
Cook for approximately one minute, stirring until fragrant.
Step 3: Make the coconut sauce.
Pour in the remaining coconut milk and bring to a gentle simmer.
Cook for approximately 10 minutes, allowing the sauce to reduce slightly.
Add the juice of half a lime and a few drops of fish sauce, if using. Taste before adding salt.
Step 4: Prepare the noodles.
Thinly slice the sugar snap peas and chilli.
Warm the precooked noodles in boiling water for approximately one minute, or follow the packet instructions.
Drain thoroughly and divide between two serving bowls.
Step 5: Assemble the dish.
Pour the fragrant coconut sauce over the noodles.
Arrange the roasted pumpkin and sliced vegetables on top.
Finish with coriander leaves, chilli and a squeeze of fresh lime juice.

Tips For The Best Results

Use full-fat coconut milk for a richer, creamier sauce.
If you prefer milder flavours, reduce the curry paste slightly and adjust the seasoning after simmering.
Sugar snap peas can be replaced with spinach, green beans or other seasonal vegetables. Firmer greens should be briefly cooked before serving.
For extra protein, add pan-fried tofu or cooked chicken.
Serve immediately while the noodles are warm and the vegetables retain their texture.
