When the weather turns chilly, few dishes feel as satisfying as a steaming bowl of chicken noodle stew. This Japanese-inspired recipe combines a rich, aromatic broth with tender meat, fresh vegetables and delicate dumplings.
The best part is that it requires very little attention once cooking begins. You can prepare everything in a saucepan or use a slow cooker for an almost effortless dinner. With warming ginger, garlic and plenty of vegetables, this colourful dish makes a delicious family meal.
A Bowl of Comfort

Why This Chicken Stew Works

The secret lies in the combination of slow-cooked chicken and deeply flavoured broth.
Chicken thighs remain tender during extended cooking, while mushrooms add a savoury richness.
Fresh ginger provides gentle warmth, and garlic develops a fragrant base without overwhelming the other ingredients.
Carrots and pak choi introduce freshness and texture, while noodles make the stew especially satisfying.
Frozen chicken gyoza add another delicious element, turning a simple soup into a substantial meal.

Ingredients For Chicken Stew

Servings: 4
Preparation time: 20 minutes
Cooking time: 1 hour 15 minutes on the hob, or up to 7 hours 30 minutes in a slow cooker
Difficulty: Easy
4 boneless chicken thighs, cut into approximately 2cm pieces
2 garlic cloves, crushed
1 thumb-sized piece of fresh ginger, grated
150g shiitake or oyster mushrooms, sliced
1 litre prepared ramen broth or good-quality chicken stock
2 pak choi, trimmed and roughly chopped
2 large carrots, cut into thin strips
200g dried ramen noodles or medium egg noodles
12 frozen chicken gyoza
Salt and freshly ground black pepper, to taste
Crispy chilli oil, to serve (optional)

How To Make Chicken Noodle Stew

Step 1: Prepare the ingredients.
Cut the chicken into evenly sized pieces so they cook consistently.
Crush the garlic, grate the ginger and slice the mushrooms.
Prepare the carrots and pak choi, keeping them separate until needed.
Step 2: Start the broth.
Place the chicken, garlic, ginger and mushrooms in a large, deep saucepan with a lid.
Season lightly, then pour over the prepared broth.
Bring to the boil, reduce the heat and cover.
Simmer gently for approximately one hour until the chicken becomes tender and is thoroughly cooked.
Step 3: Add the vegetables and noodles.
Remove the lid and stir in the carrots, pak choi and dried noodles.
Arrange the frozen gyoza across the surface.
Cover again and continue cooking over a medium heat for approximately 10 minutes, or until the noodles are tender and the dumplings are thoroughly cooked.
Stir occasionally to ensure the noodles remain submerged.
Step 4: Serve immediately.
Divide the noodles, vegetables, chicken and dumplings between four deep bowls.
Ladle over the aromatic broth and finish with a little crispy chilli oil if desired.

How To Use A Slow Cooker

Combine the chicken, mushrooms, garlic, ginger and broth in the slow cooker.
Cook on high for 4–5 hours or low for 5–7 hours.
Add the vegetables, noodles and frozen gyoza during the final 15–30 minutes, switching to high heat.
Check that everything is fully cooked before serving.

Tips For The Best Results

Use a flavourful chicken stock if prepared ramen broth is unavailable.
Avoid adding the noodles too early, as they can become excessively soft.
For extra vegetables, try adding spinach or thinly sliced spring onions.
If preparing the stew ahead, cook and store the noodles separately to prevent them absorbing too much liquid.
Leftovers should be cooled promptly, refrigerated and reheated thoroughly.
