Some of the most satisfying dinners come from combining ordinary ingredients in unexpected ways. This North African-inspired fish pilaf transforms bulgur wheat, fresh vegetables and delicate white fish into a colourful meal filled with aromatic spices and contrasting flavours.
The combination of smoky harissa, earthy cumin and sweet dried apricots makes this recipe particularly interesting. Everything cooks in one pan, making it ideal for busy evenings when you want something homemade without spending hours washing up.
Why This Dish Deserves A Try
Bulgur wheat is an excellent alternative to rice. It has a pleasantly nutty flavour, absorbs seasonings beautifully and cooks relatively quickly.
In this recipe, the grains simmer with softened onions, carrots and aromatic stock. Dried apricots provide occasional bursts of sweetness, while harissa adds gentle warmth and complexity.
The fish cooks directly on top of the pilaf, absorbing the fragrant steam without requiring a separate frying pan. Fresh spinach and lemon complete the dish, keeping it light and colourful.
Everything You Need
Servings: 4
Preparation time: 10 minutes
Cooking time: 35 minutes
Total time: 45 minutes
Difficulty: Easy
Ingredients:
1 tablespoon olive oil
2 medium onions, thinly sliced
3 carrots, grated
2 teaspoons cumin seeds
2 tablespoons harissa paste
200g bulgur wheat
6 dried apricots, finely chopped
700ml light chicken or vegetable stock
200g baby spinach
4 firm white fish fillets, such as cod or haddock
4 thin lemon slices
Freshly ground black pepper
Choose sustainably sourced fish where possible. If cooking for children or anyone sensitive to spice, use a milder harissa or reduce the quantity slightly.
Build The Flavour In One Pan
Heat the olive oil in a large, heavy-based saucepan or flameproof casserole dish with a lid. Add the onions and cook over a medium heat for approximately 10 minutes, stirring occasionally, until soft and lightly golden.
Stir in the grated carrots and cumin seeds. Cook for another two minutes to release their aroma.
Add the harissa, bulgur wheat and chopped apricots, mixing until the grains are evenly coated. Pour in the stock, bring to a gentle boil, then cover and simmer for seven minutes.
Let The Fish Cook Gently
Add the spinach and stir until the leaves begin to wilt. Arrange the fish fillets over the grains, placing a lemon slice on each piece. Season with black pepper.
Cover and continue cooking over a gentle heat for eight minutes. Reduce the heat further and cook for another seven to eight minutes, until the bulgur is tender and the fish is opaque and flakes easily. Check the thickest part is thoroughly cooked.
If the mixture becomes too dry before the grains are ready, add a small splash of hot water.
Make It Your Own
For extra freshness, finish with chopped parsley or coriander. A spoonful of plain yoghurt can soften the spice, while additional lemon juice gives the pilaf a brighter flavour.
Leftovers should be cooled promptly and refrigerated. Reheat thoroughly, taking care not to overcook the fish.
A Dinner Worth Repeating
This fragrant pilaf proves that healthy, satisfying cooking does not require complicated techniques or expensive ingredients. With its tender fish, colourful vegetables and gently spiced grains, it is a practical way to bring something different to the family dinner table.
