Who says comfort food needs meat to be satisfying? These crispy vegan bites deliver everything you could want from a weekend treat: a beautifully seasoned crust, a tender centre and plenty of flavour in every mouthful.
The secret ingredient is seitan, a plant-based protein made from wheat gluten. Combined with tofu, aromatic herbs and a crunchy breadcrumb coating, it creates a surprisingly satisfying texture. This recipe takes some preparation, but the result is well worth the effort.

Why Seitan Works So Well

Unlike many plant-based alternatives, seitan has a naturally firm, slightly chewy texture. Kneading the dough develops its elasticity, while simmering it in seasoned stock adds flavour and helps it hold its shape.
The crispy exterior comes from three layers: plain flour, a chickpea flour batter and seasoned panko breadcrumbs. Together, they create a golden coating that contrasts beautifully with the tender filling.

Ingredients You'll Need

Servings: 4–6
Preparation time: 45 minutes
Cooking time: 50 minutes
Total time: Approximately 1 hour 35 minutes, excluding cooling
Difficulty: Moderate
For the seitan:
250g firm tofu
150ml unsweetened soya milk
2 teaspoons miso paste
2 teaspoons yeast extract
1 teaspoon each dried tarragon, sage and thyme
1 teaspoon onion powder
2 teaspoons garlic powder
160g vital wheat gluten
40g pea protein powder
1½ litres vegetable stock
1 onion, quartered
3 garlic cloves
A handful of parsley stalks
1 teaspoon salt
½ teaspoon white pepper
For the crispy coating:
300g gram flour
350g plain flour
200g panko breadcrumbs
2 teaspoons each dried thyme, basil, oregano and ground ginger
3 teaspoons each celery salt, black pepper, white pepper, dried mustard, paprika and dried sage
4 teaspoons garlic powder
1 teaspoon brown sugar
Water, as needed
Vegetable or sunflower oil, for frying

Prepare The Vegan Filling

Blend the tofu, soya milk, miso, yeast extract, herbs and seasonings until smooth. Transfer to a bowl and incorporate the vital wheat gluten and pea protein.
Knead the mixture for 10–15 minutes until springy and elastic. Flatten to approximately 1cm thick and cut into generous pieces.
Bring the vegetable stock to a gentle simmer with the onion, garlic and parsley stalks. Add the seitan, cover and cook for 30 minutes. Leave it to cool in the liquid, preferably refrigerating overnight for a firmer texture.

Create The Crunchy Coating

Combine the breadcrumbs with the coating spices in a wide bowl. Place the plain flour in another bowl, then mix the gram flour with enough water to create a thick batter.
Drain and pat the seitan dry. Coat each piece in plain flour, dip into the chickpea batter and press into the seasoned breadcrumbs.
Heat the frying oil to 180°C. Cook the pieces in batches for approximately six minutes until deeply golden and crisp. Drain on kitchen paper.

Serve It Your Way

These crunchy bites are delicious tucked into soft buns with shredded lettuce and homemade coleslaw. Alternatively, serve them with roasted potato wedges, fresh cucumber or a tangy tomato dipping sauce.
For the best texture, enjoy them immediately while the coating remains crisp.
Seitan contains wheat gluten, so this dish is unsuitable for anyone with coeliac disease or a gluten intolerance.
